I just turned 92 this past weekend! Well maybe only 29, but I thought it would be more fun to put that on my birthday cake. Lately, I have been getting cakes or cupcakes in fun shapes for my birthday. This year, I thought I would try to make one of my favorite childhood birthday cakes. My favorite homemade cake is a burnt sugar cake and this is the old school recipe my mom always used to make it. I was going to clean it up, but then thought it was best left in its original form. Please enjoy
By the way, there are no “healthy” substitutions used in this recipe…proceed with CAUTION 😉
Ingredients:
2 cups brown sugar
1/2 cup shortening
2 eggs
1 cup sour cream or buttermilk
2 1/2 cups flour
1 tsp baking powder
2 Tbs. burnt sugar
1 tsp. baking soda
1/2 cup hot black coffee
Directions: To make burnt sugar: Place 1 cup granulated sugar in iron skillet. Using wooden spoon, stir until sugar is melted and brown. While still over heat, pour in 1 cup boiling water, stirring constantly. Boil until thick like heavy syrup.
Cream sugar and shortening, add eggs well beaten, and beat mixture.
Add milk and/or sour cream and beat well.
Add sifted flour and baking powder and beat.
Dissolve burnt sugar and soda in hot coffee. Then add to cake mixture and beat thoroughly.
Bake in two 9″ pans at 325 degrees Fahrenheit.
Bake for 20-30 minutes or until done.
Burnt Sugar Frosting
Ingredients
2 unbeaten egg whites
1 1/4 cups sugar
2 tsps. light corn syrup or 1/4 tsp. cream of tartar
1/4 cup cold water
3-4 Tbs. of Burnt-sugar syrup
Dash of salt
Directions: Place all ingredients except vanilla in top of double boiler (not over heat); beat 1 one minute with electric or rotary beater to blend. Place over boiling water and cook, beating constantly, till frosting forms stiff peaks, about seven minutes (don’t overcook). Remove from boiling water. Pour into mixing bowl, if you wish. Add vanilla, beat till of spreading consistency, about 2 minutes. Frost tops and sides of two layers.
